Smoked Sesame Seared Albacore Tuna Brown Rice Vermicelli Salad & Soy Vinaigrette
Recipe makes 4 portions
Ingredients:
Bamboo Smoked Sesame Seared Albacore Tuna Loin:
1 Harbour Marine Albacore Tuna Loin
1/2 cup Roland Bamboo smoked sesame seeds
Pinch Salt & pepper
3tbsp Vegetable Oil
Brown Rice Vermicelli Salad:
1 250g pack Roland Brown Rice Vermicelli
1 Medium red pepper, cut julienne
1 Fuji apple, cut julienne
14 Snap peas, cut julienne
2 Green onions, finely sliced
Half bunch of cilantro, finely sliced
Soy Vinaigrette:
1 Lime zest and juice
1tbsp Chili garlic sauce
1/3 cup Roland Soya sauce
1/3 cup Roland Toasted sesame oil
2tbsp Roland Rice wine vinegar
2tbsp Liquid honey
Directions:
Bamboo Smoked Sesame Seared Albacore Tuna Loin:
1. On a plate mix sesame seeds, salt & pepper.
2. Cut tuna loin into 4 even portions.
3. Roll in sesame seeds and ensure all sides are well coated.
4. Heat a large Teflon coated fry pan to med-high heat and then add veg oil.
5. Quickly sear tuna on all sides, place on clean plate and let cool in the fridge.
Soy Vinaigrette:
1. In a small bowl whisk all the ingredients for the Soy Vinaigrette.
Brown Rice Vermicelli Salad:
1. In a large pot bring water to a boil.
2. While waiting for pot to boil, place vermicelli noodles in a bowl of warm water and let sit for 15 minutes.
3. Add noodles to a pot of boiling water and cook for 1-2mins or until just tender.
4. Strain and rinse in cold water until noodles are chilled.
5. Strain the noodles and place into large bowl.
6. Add cut vegetables, apple, green onions & cilantro.
7. Add soy vinaigrette and mix together.
